Ingredients

Scale
  • 1 cup Arborio rice
  • 1 cup chopped shiitake mushrooms
  • 4 cups vegetable broth
  • 1/2 cup white wine
  • 1/4 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Sauté onions and mushrooms in butter until tender.
  2. Add Arborio rice and stir to coat.
  3. Pour in white wine, stirring until absorbed.
  4. Gradually add broth, stirring frequently until rice is creamy and tender.
  5. Stir in Parmesan, season with salt and pepper, and serve warm.
