Arugula Salad with Mushrooms

Ingredients

Scale
  • 2 cups fresh arugula
  • 1 cup sliced cremini mushrooms
  • 1/4 cup shaved Parmesan cheese
  • 1/4 cup toasted pine nuts
  • 3 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine arugula, mushrooms, Parmesan, and pine nuts.
