Zoodle Marinara Casserole? If you’re wondering what the heck a “zoodle” is, fear not. It’s not as out there as it sounds. Zoodle is just zucchini that’s been spiral cut to look like pasta noodles. Zucchini plus noodles equals zoodles!

Zoodles are a flavorful alternative to traditional pastas and they can be an absolute blessing to people on a low-carb diet. And because zucchini has such a mild flavor, zoodles can be the vehicle for a delicious sauce and other pasta ingredients.

Aside from prepping the zucchini, (which really only takes a few minutes) one of the things I love about this Zoodle Marinara Casserole is how quick and easy it is. Even if you love cooking meals from scratch, sometimes you just need to hurry things up and get dinner on the table. In that department, it doesn’t get much better than this. Whether you’re trying to get the family fed before a PTO meeting or you just don’t feel like making a big fuss with dinner, this may become your go-to meal.

Of course, you can also go all out if you want, and make your own pasta sauce. That’s entirely up to you. But the idea here is that you can make a healthy, low-carb meal that’s on the table in a flash. Cut the zoodles while the oven is heating up and the whole process moves along quite quickly.

As for serving this dish? It kind of defeats the low-carb idea, but I do love this with some garlic bread, hot and fresh from the oven. However, there are plenty of ways to keep it bread-free. Add in some fresh broccoli or serve it with a side salad of leafy greens and heirloom tomatoes. Whatever you decide, I promise it will be tasty.

Ingredients

Scale
  • 4 zucchini
  • 1 (28-ounce) jar marinara sauce
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 375 degrees F and lightly coat an 8×8-inch baking dish with cooking spray.
  2. Using a spiralizer, turn the zucchini into zoodles with a medium thickness.
  3. Toss the zoodles with the marinara sauce, cheese, salt, and pepper and transfer to the baking dish. Bake for 25 minutes, until warm and bubbling. Serve.
