No recipe could be simpler—or provide a more delicious way to enjoy fresh, juicy raspberries—than this classic English dessert. The combination of raspberries, cream, and a dash of lime is a great way to show off your harvest and top off a summer dinner when entertaining.

No recipe could be simpler—or provide a more delicious way to enjoy fresh, juicy raspberries—than this classic English dessert. The combination of raspberries, cream, and a dash of lime is a great way to show off your harvest and top off a summer dinner when entertaining.

Ingredients

Scale
  • 2 cups fresh raspberries
  • 4 to 6 tablespoons confectioner’s sugar, divided
  • 1 teaspoon lime juice
  • 1 1/3 cups heavy whipping cream
  • Mint sprigs, optional

Instructions

  1. In a medium bowl, mash the raspberries with a fork until they release their juice.
  2. Add the lime juice and half the confectioner’s sugar. Stir to combine. Cover the mixture and refrigerate until chilled, about 20 minutes.
  3. In a mixing bowl, beat the cream with an electric mixer or whisk until it begins to thicken. Sprinkle the remaining confectioner’s sugar over the cream and continue to beat until stiff peaks form.
  4. Fold the whipped cream into the raspberry mixture and spoon into dessert dishes. Garnish with a whole raspberry and/or a sprig of mint.
