Rainbow Shaved Radish Salad

When you have a rainbow of radishes growing in your garden, punch them up with a vinegar dressing, in this Shaved Radish Salad.

Rainbow Shaved Radish Salad

What do you do when you have a hefty harvest of radishes in your garden? Make salad, of course! Really showcase the fruits of your labor by making some Rainbow Shaved Radish Salad. It’s the way to go!

Rainbow Shaved Radish Salad is easy, colorful, and puts a spotlight on your garden goodies. Sliced radishes, put through the thinnest setting on the mandolin, take center stage in this recipe. You’ll get to enjoy their slightly crunchy texture and mildly peppery taste.

Alongside your radishes can be a choice of other thinly sliced root vegetables from your garden. Beets, carrots, and fennel are just some of the colorful and tasty veggies you can include in your wonderful rainbow salad.

Giving your Rainbow Shaved Radish Salad an added kick are shallots, extra-virgin olive oil, lemon juice, and rice wine vinegar. Rice wine vinegar, in particular, brings to the table the sweetness of rice wine and the perky flavors of vinegar. It blends in nicely with the refreshing tang of lemon juice and that distinct hint of spice from shallots. Honey and extra virgin olive oil make your salad more savory, with honey adding another layer of delicate sweetness into the mix. Adjust the taste with some salt and pepper and top off your Rainbow Shaved Radish Salad with some freshly chopped basil for that earthy flourish.

Rainbow Shaved Radish Salad

When you have a rainbow of radishes growing in your garden, mix them together and punch them up with a vinegar dressing, in this Rainbow Shaved Radish Salad.

Ingredients

Scale
  • 1 cup shallots, finely sliced and rinsed
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons lemon juice (more to taste)
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon honey
  • 6 cups washed and trimmed radishes, sliced with a mandolin on its thinnest setting
  • 2 cups of other root vegetables, sliced thin (beets, carrots, fennel)
  • Sea salt and freshly ground black pepper to taste
  • 2 tablespoons freshly chopped basil

Instructions

  1. In a bowl, toss together the dressing ingredients: shallots, olive oil, lemon juice, rice wine vinegar, and honey.
  2. Add radishes and other root vegetables and mix.
  3. Sprinkle generously with salt, pepper, and freshly chopped basil, and enjoy!

Radishes are annual plants in the Brassicaceae mustard family. So, while they might look like a carrot or a turnip, radishes are actually more closely related to Brussels sprouts and cabbage.
