Here’s an easy side dish you’ll want to serve with every meal. The nutty quinoa melds with the earthy flavors of mushrooms and garlic to complement a host of main dishes. It’s a simple yet elegant side that will impress family and guests alike!

Garlic Mushroom Quinoa

Here’s an easy side dish you’ll want to serve with every meal. The nutty quinoa melds with the earthy flavors of mushrooms and garlic to complement a host of main dishes. It’s a simple yet elegant side that will impress family and guests alike!

Ingredients

Scale
  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 pound cremini mushrooms, thinly sliced
  • 5 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons grated Parmesan (optional)

Instructions

  1. In a large saucepan heat 2 cups water to boiling. Add quinoa and cook about 15 minutes, until quinoa has opened and water is absorbed; set aside.
  2. Heat olive oil in a large skillet over medium high heat. Add mushrooms, garlic, and thyme, and cook, stirring occasionally, until tender, about 3 to 4 minutes; season with salt and pepper, to taste. Stir in quinoa until well combined.
  3. Serve immediately, garnished with Parmesan, if desired.
