This garlic aioli is a delicious, creamy condiment made from garlic, mayonnaise, and seasonings. It’s perfect for dipping, spreading, or dressing up your favorite dishes.

Garlic aioli is thought to have originated in the south of France. The word “aioli” comes from the Provencal word “aio,” meaning garlic and oil, which is how it was originally made. The first written recipe for garlic aioli appeared in print in 1742, but it’s likely that this delicious condiment has been around for much longer.

Making this garlic aioli at home is surprisingly easy! All you need is a bowl, a whisk, mayo, garlic, lemon juice, salt, pepper, and chives. Simply combine all of the ingredients in your bowl and whisk. Then, taste and adjust the seasoning as necessary.

Ingredients

Scale
  • 1 cup mayonnaise
  • 4 cloves peeled garlic, grated
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh chive
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Whisk all ingredients together in a bowl.
  2. Cover and refrigerate for at least 30 minutes.
  3. The aioli will keep for a week in an airtight container.

    Thank you so much for this scrummy Aioli recipe, Bill. I’ve been looking for something like this and yours is the perfect recipe. But raw garlic gives me heartburn, so will you please send me some tablets? I’m gonna eat it anyway! I’m sure you know that okra cut length-wise, breaded and fried in pure cornmeal is wonderful to dip into this kind of Aioli!
