Snowy eggplant

Snowy eggplant is a white, quick-growing eggplant. Plants only grow about 24 inches, fruit grows to be about 7 inches long, and are ready to start harvesting in 60 days. The texture is more meaty than purple eggplants, but milder.

• use row covers for best success, to keep soil warm, and remove once plants blossom

• clipping fruits encourages more production
