The Rosa Bianca eggplant may produce less fruit than others in cooler climates, but the flavor is a clear favorite amongst eggplant lovers. This is a small 4 to 6 inch round lavender/pink and white streaked heirloom that has a mild, nutty, non-bitter, and creamy taste that soaks up any flavor it’s cooked with. It’s happiest in warmer, humid climates with a long growing season and grows 2 to 3 feet tall.
