This is the only lavender in our collection that is not English lavender but that is good for culinary use. Provence lavender is a hybrid (Lavandula x intermedia) that does especially (and unusually) well in areas with humid summers. This lavender is said to have the strongest fragrance of all lavenders, and its foliage has a pleasing fragrance as well. Provence lavender is well suited to plant as a colorful hedge. This variety is also sometimes called “Fat Lavender” for its flower heads that can grow to 3 inches long.
