Blood health

Eating foods rich in vitamin C can help prevent anemia—an inadequate level of iron in your body. Vitamin C helps your body absorb iron. The nitric oxide in kale is good for your blood flow, too. It causes your arteries to relax and expand, increasing blood flow throughout the body.

Immune system health

The vitamin C and nitric oxide in kale are good for helping to boost the immune system. Nitric oxide triggers immune cells to target bacteria and cancer cells.

Bone strength

The calcium in kale contributes to long-term bone health. It also supports the health of muscles and organs.

Cancer prevention

Kale and other dark leafy vegetables may help reduce the risk of some cancers. The antioxidant properties of vitamin C help fight the formation of free radicals that cause cancer. Kale also contains other phytochemicals, such as sulforaphanes and indoles, which researchers say may protect the body against cancer.

Digestive health

The fiber in kale is good for your digestive system. If you find that some of your kale is a little on the chewy side, or you don’t enjoy the stems and ribs, you can cut away the leafy greens and blanch them in boiling water for about three minutes to soften the leaves. Also, see our salad recipe that explains why massaging your kale is good for your digestion!
