Ingredients

Scale
  • 2 cups fresh spinach
  • 1/4 cup pine nuts
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • Lemon juice to taste (optional)

Instructions

  1. In a food processor, combine spinach, pine nuts, Parmesan cheese, and garlic.
  2. Pulse until the ingredients are finely chopped and well combined.
  3. While the processor is running, slowly drizzle in olive oil until the pesto reaches your desired consistency.
  4. Season with salt, pepper, and lemon juice (if using) to taste.
  5. Transfer the pesto to a jar and store in the refrigerator for up to one week.
