This Spinach and Mushroom Risotto takes the traditional recipe to the next level by incorporating tender spinach and sautéed mushrooms. The combination of earthy mushrooms and vibrant spinach creates a harmonious blend of flavors that makes this dish a delightful choice for a cozy dinner or special occasion.

The key to making a great risotto lies in the cooking process. Arborio rice, the traditional variety used in risotto, is slowly cooked in broth and stirred frequently to release its natural starches. This technique results in a luscious, creamy texture that is characteristic of risotto. In this recipe, the rice is combined with sautéed mushrooms, which add a rich, savory depth to the dish. Ingredients

Scale
  • 4 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup Arborio rice
  • 1/2 cup white wine
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a saucepan, warm the broth over low heat and keep it simmering.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic and sauté until translucent.
  3. Add Arborio rice and cook for 1-2 minutes, stirring to coat the rice with oil.
  4. Pour in the white wine and cook until it evaporates.
  5. Begin adding warm broth, one ladle at a time, stirring constantly and allowing the liquid to absorb before adding more.
  6. Continue this process for 15-20 minutes until the rice is creamy and cooked to your desired consistency.
  7. In a separate skillet, sauté mushrooms until browned and set aside.
  8. When the risotto is nearly done, stir in chopped spinach and cooked mushrooms.
  9. Add grated Parmesan cheese, salt, and pepper to taste. Mix well.
  10. Serve immediately and savor the rich flavors of spinach and mushroom risotto!
