Ingredients

Scale
  • 2lbs potatoes, washed and cut into bite-sized chunks
  • 2 tablespoons homemade paprika seasoning
  • 2 tablespoons olive oil
  • 2 sprigs of fresh rosemary, finely chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent the potatoes from sticking.
  2. In a large mixing bowl, add the potato chunks. Ensure they are washed and dried thoroughly. Leaving the skins on adds texture and flavor to the dish.
  3. Drizzle the olive oil over the potatoes, then sprinkle the homemade paprika seasoning and chopped rosemary evenly over them. Use your hands or a spatula to toss the potatoes until they are well coated with the seasoning mixture.
  4. Transfer the seasoned potatoes to the prepared baking sheet, spreading them out in a single layer. This ensures that they cook evenly and become crispy on all sides.
  5. Place the baking sheet in the preheated oven and roast the potatoes for about 30-35 minutes, or until they are golden brown and crispy on the outside, and tender on the inside. To ensure even cooking, flip the potatoes halfway through the roasting time.
  6. Once the potatoes are roasted to perfection, remove them from the oven and transfer them to a serving dish. Season with additional salt and pepper to taste, if desired. These roasted paprika potatoes are best served hot, alongside your favorite main dish or as a delicious side dish for any occasion.
  7. For an extra burst of flavor and freshness, garnish the roasted paprika potatoes with a sprinkle of fresh chopped parsley or a squeeze of lemon juice before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them in the oven or microwave until warmed through before serving.
