Blueberry Tofu Smoothie

One of the problems with a lot of smoothie recipes is that they aren’t very vegan friendly. They have yogurt and milk most of the time, and many of them also call for honey as a sweetener. You can certainly omit the yogurt and substitute oat, soy, or almond milk for the cow’s milk, but there’s a certain consistency you get with yogurt that can be hard to replicate.

Enter tofu! Silken tofu is a wonderful substitute for yogurt and it’s packed with protein, calcium, iron, and may have anti-inflammatory properties. Not a bad addition to a smoothie, I’d say!

As for this Blueberry Tofu Smoothie, all that wonderful tofu makes it perfect for breakfast or an afternoon snack. It’s not just filling, but the blend of ingredients offer your body all kinds of fuel for whatever the day brings your way. And it doesn’t hurt that smoothies are so easy to make. Throw everything into a blender and you’re done!

By the way, in case you’re not vegan and you’re wondering if tofu will taste “weird” in a smoothie, rest assured that it’s not weird at all. You probably won’t even notice the difference. I would, however, suggest using a vegetable milk with vanilla, since there’s no honey or sugar in this recipe. Vanilla coconut milk will give you a nice silky, creamy drink, while soy milk will be a little more on the thinner side. Almond and cashew milks are good with this, too. It really just depends on your preference here. But don’t worry, it will be good whatever you choose.

One pro tip I’ll include is that you can double or triple the recipe and make yourself several smoothies in one sitting. Just keep the extra in the refrigerator until you’re ready for it.

Ingredients

Scale
  • 3/4 cup fresh or frozen blueberries
  • 1 ripe banana
  • 1 cup soy milk or almond/cashew milk (your choice of flavor)
  • 3 ounces silken tofu
  • 1/2 cup orange juice
  • 1 teaspoon lime juice

Instructions

  1. Combine all ingredients in a blender.
  2. Puree until completely smooth.
  3. Serve immediately.
  4. Refrigerate leftovers.
