I’ve always thought of spring as a time for sweet treats. I know winter is the season for pies and cookies, but I also find there are so many savory dishes that I just love to enjoy on cold nights. You know the ones. They’re hearty and filling and full of warmth.

Spring, though! It’s the time of year when we open our windows and come out of our winter hibernations. Tulips and daisies and dandelions bring pops of color to the world. And flavors change. I know I’m ready to set aside those winter meals and look for lighter fare like berries, peaches, and lemons.

Of course, I also love baking. Luckily, there are plenty of ways to enjoy fruits in baked goods and other desserts! Carrot cake, anyone? Or maybe you’re more the peach cobbler type?

This edition of RecipeLion Magazine combines all of these spring joys–fruit, baking, sweet treats, and, as always, some easy peasy recipes that you can make in a snap and that taste every bit as good as you would hope.

6 No-Bake Cheesecake Delights

Who says a delightful dessert has to be complicated? I’m all for doing things the easy way where I can. That’s what I love about these no-bake recipes. In fact, you can put some of these together in as little as 15 minutes. The hard part is waiting for them to freeze!

  • Oreo No-Bake Cheesecake Bars: This recipe brings together the classic flavors of cookies and cream ice cream and the light, silky texture of cheesecake. What could be better? Oh! How about crushed Oreos on top!
  • No-Bake Nutella Cheesecake: If you love Nutella, this one’s for you. Chocolate-hazelnut flavor and creamy texture take center stage in this delightful treat. These are perfect for throwing together in the morning and having dessert ready and waiting when you get home after work.
  • No-Bake Pumpkin Cheesecake Balls: Cheesecake, pumpkin pie spices, and no baking? This decadent dessert has it all! Oh! Did I mention the outer shell of sweet, white chocolate? This recipe is getting a lot of show time around here, that’s for sure!

5 Luscious Light Treats

These treats are ideal for those warm days of late spring when you want to enjoy something sweet and light.

  • Classic Cherries Jubilee: This classic dish is not only delish, it’s also the perfect recipe if you want to impress your guests. Best of all, it’s easier than most people realize. If you want a flash of style with dessert, don’t skip this one!
  • All-Day Tropical Fruit Salad: A tropical fruit salad is a yummy and refreshing celebration of spring. The bright, zesty flavors of pineapple, berries, peaches, and orange come together for a naturally sweet embodiment of the sun, sand, and sea. It also happens to be a healthy dish, so go ahead and eat dessert first!

9 Cobblers, Cakes & More

Fresh spring fruits and vegetables take center stage in this collection of cobbler and cake recipes. Enjoy the tart taste sensation of fresh cherries, the juicy sweetness of spring peaches, or the brightness of lemon, all in your new favorite spring dessert.

  • Just Peachy Pound Cake: The star of this cake is undoubtedly the fresh and fragrant peaches. They are peeled, diced, and mixed with a touch of brown sugar and cinnamon, infusing the cake with their natural sweetness and a hint of warm spice.   • Classic Carrot Cake: I love the sweet taste of spring carrots. Carrots are, of course, great in soups, salads, coleslaw, and so many savory dishes, but there’s no beating the joy of a Classic Carrot Cake! Carrot cake manages to be sweet, but not too sweet, moist and rich, and always rapturous!

7 Irresistible Cookies

Cookies are always in fashion, if you ask me. Perfect for picnics, school socials, cookouts, pot luck dinners, or just because. You can’t go wrong with cookies.

  • Stained Glass Window Cookies: To craft these delectable cookies, you’ll need a handful of simple yet flavorful ingredients: unsalted butter, semisweet chocolate chips, vanilla extract, salt, chopped walnuts, mini marshmallows, and sweetened shredded coconut. This delightful combination of ingredients sets the stage for a treat that will delight your taste buds.
  • Chocolate Oatmeal Cookies: Chocolate Oatmeal Cookies are always good, but on a hot spring day, it can be daunting to turn the oven on. That’s where this recipe comes in! These no-bake cookies bring together old-fashioned oats, creamy peanut butter, and flaked coconut for a nice boost of flavor.
