Stuffed Zucchini Boats with Quinoa and Feta

Delight your taste buds with these Stuffed Zucchini Boats filled with a hearty mixture of quinoa, feta, and fresh herbs. This nutritious and flavorful dish combines the earthy taste of zucchini with the richness of quinoa and the tanginess of feta for a satisfying and wholesome meal.

What makes this dish truly special are the zucchini boats. Such a simple idea that creates so much flavor. To create vessels for the delicious filling, cut your zucchini in half and scoop out the center of each half, creating a hollowed-out ‘boat.’

The filling is a mixture of cooked quinoa, feta cheese, fresh herbs, and toasted pine nuts along with a bit of olive oil. Once combined, this delightful filling is stuffed into the boats and placed in the waiting oven.

Once they are done, these amazing vegetables are bound to be the perfect side to any meal. The tender zucchini with the crunch of pine nuts and creamy balance of feta are sure to become a favorite addition to any of your meal planning.

Ingredients

Scale
  • 4 medium-sized zucchinis, halved lengthwise
  • 1 cup cooked quinoa
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh chives, chopped
  • 2 tablespoons pine nuts, toasted
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Scoop out the center of each zucchini half, creating a hollow “boat.”
  3. In a bowl, combine cooked quinoa, feta cheese, fresh dill, fresh chives, and toasted pine nuts.
  4. Drizzle olive oil over the mixture and season with salt and pepper. Mix until well combined.
  5. Stuff each zucchini boat with the quinoa mixture.
  6. Place the stuffed zucchini boats on a baking sheet and bake for 20-25 minutes or until the zucchini is tender.
  7. Serve with a squeeze of fresh lemon juice.
