Herbed Zucchini Noodles with Cherry Tomatoes

Experience a lighter, healthier twist on pasta with Herbed Zucchini Noodles. Spiraled zucchini takes center stage in this refreshing dish, tossed with a medley of fresh herbs and cherry tomatoes. It’s a perfect choice for those looking to add a touch of freshness to their meal.

You can probably get almost all of these ingredients right from your own garden while adding in just a few things from your cupboard. From the vegetable garden, you will need 4 medium-sized zucchinis and a cup of cherry tomatoes. The herb garden can supply the fresh basil, mint, and parsley.

The base of this meal is a generous portion of spiralized zucchinis. The sauce is a mouth-watering combination of the cherry tomatoes, garlic, and herbs cooked in a little oil. The zoodles and sauce are tossed together and allowed to simmer for a couple of minutes. You want the zucchini to be tender but still crispy.

Do not be fooled by the simplicity of this dish. The flavors once melded together are absolutely delicious. You won’t even miss the carbs!

Ingredients

Scale
  • 4 medium-sized zucchinis, spiralized
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Spiralize the zucchinis into noodles and set aside.
  2. In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for a minute.
  3. Add cherry tomatoes to the pan and cook until they start to soften.
  4. Toss in the zucchini noodles and cook for 2-3 minutes, stirring occasionally.
  5. Add fresh basil, mint, and parsley. Season with salt and pepper.
  6. Cook for an additional 1-2 minutes until the zucchini noodles are tender but still crisp.
  7. Optional: Sprinkle with grated Parmesan cheese before serving.
