Parmesan-Roasted Zucchini Rounds

Add a touch of elegance to your dinner table with these Parmesan-Roasted Zucchini Rounds. This easy-to-make side dish features zucchini slices coated in a Parmesan and herb mixture, roasted to perfection. The result is a medley of flavors that will have you savoring every bite.

In cooking, there’s a fine balance between simplicity and elegance. It’s about combining flavors and textures to create memorable dishes. True culinary artistry lies in turning basic ingredients into something exceptional with creativity and inspiration. That is definitely the case here!

All you need for this dish is some zucchini, Parmesan cheese, olive oil, and a mix of dried herbs. After slicing the zucchinis, gently coat them with the Parmesan and herb combination. All that is left is to roast them in a preheated oven for 20-25 minutes while you work on the rest of the meal.

Serve these hot, right out of the oven, and enjoy the delicious crispness of this wonderful vegetable. You can also whip up a yummy dip with sour cream and fresh herbs to accompany this flavorful side dish.

Ingredients

Scale
  • 3 medium-sized zucchinis, sliced into rounds
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine Parmesan cheese, olive oil, dried basil, dried thyme, salt, and pepper.
  3. Toss the zucchini rounds in the Parmesan mixture until well coated.
  4. Arrange the coated zucchini rounds on a baking sheet in a single layer.
  5. Roast in the preheated oven for 20-25 minutes or until the edges are golden brown and crisp.
  6. Serve as a sophisticated side dish that complements any main course.
