Cultivated 10,000 years ago, Einkorn is thought to be the oldest form of wheat. Einkorn is easy to grow, is higher in protein than most wheat varieties, and delicious, but it has a low yield. Einhorn is a beautiful addition to the garden, but it holds tight to its hulled seeds, making it difficult to harvest enough berries to make flour.
