Chioggia is a favorite heirloom beet that holds a surprise: bright red on the outside, it reveals candy-stripe, concentric circles in its interior. Also known as “Candystripe” or “Bull’s Eye,” this eye-catching beet takes its name from a small fishing village in Italy. Added to salads, Chioggia gives a pop of color. It tastes just as sweet cooked, but the ring pattern will fade.
