Ingredients

Scale
  • 2 large red bell peppers
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 cloves garlic, minced
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Assorted garden vegetables for dipping (carrots, cucumbers, bell peppers, cherry tomatoes, etc.)

Instructions

1. Roast the Bell Peppers:

  • Preheat your oven to 450°F (230°C).
  • Wash the bell peppers, then slice them in half lengthwise and remove the seeds and membranes.
  • Place the pepper halves, skin side up, on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for about 20-25 minutes, or until the peppers are charred and blistered.
  • Remove from the oven and let them cool in a bowl, covered for at least 15 minutes before peeling off the skin. Set aside.

2. Prepare the Hummus:

  • In a food processor, combine the roasted bell peppers, chickpeas, minced garlic, tahini, lemon juice, olive oil, ground cumin, salt, and pepper.
  • Blend until smooth and creamy, scraping down the sides of the processor as needed to ensure everything is well incorporated.
