Marinated Broccoli with Curry Dip

Do you ever go through your recipes, come across a favorite you haven’t made in years, and wonder why? Sometimes recipes become so popular that cooks feel the need to move on, or some new trendy favorite takes its place. Then the old favorite languishes at the bottom of the recipe file, ignored for no good reason until it’s rediscovered and enjoyed again. Marinated Broccoli with Curry Dip is one of those recipes.

Emerging in the 1970s, this appetizer recipe was a hostess—and guest—favorite. It’s dead simple to make, and you prepare it a day ahead, so there’s no last-minute cooking. In fact, there’s no cooking at all! The overnight marinade softens the raw broccoli just enough to make it tender to the bite.

At first the combination of ingredients might give you pause: dill, curry, and… ketchup? Trust us here. The ketchup, and a dash of Worcestershire sauce, give the curry dip a pleasant tang. And if you’ve ever enjoyed Indian food, you know that dill (in the marinade) and curry are quite compatible.

All of these flavors come together to make an unusual—but tantalizing—complement to the broccoli. Well worth bringing back for your 21st century hors d’oeuvres rotation!

Ingredients

Scale
    • 1 large head of broccoli, cut into small florets
  • Marinade:
    • 1/4 cup red wine vinegar
    • 3/4 cup extra virgin olive oil
    • 2 garlic cloves, split
    • 1 teaspoon sugar
    • 2 teaspoons dill weed
  • Dip:
    • 2 cups mayonnaise
    • 1 to 1/2 tablespoons curry powder
    • 1 tablespoon ketchup
    • 1/4 teaspoon Worcestershire sauce

Instructions

  1. Place broccoli in a large plastic zipper bag and pour marinade over. Seal and toss to mix thoroughly. Refrigerate overnight, turning a time or two.
  2. The next day, drain the broccoli and arrange on a large, flat platter.
  3. Mix the dip in a serving bowl and serve side-by-side with the broccoli, or with the broccoli surrounding the dip bowl.

    Please clarify the amount of curry powder used – there seems to be a typo in the recipe.
