Homemade carrot chips are a delightful and healthy snack alternative to store-bought potato chips. This simple recipe creates a crunchy, satisfying treat packed with nutrients, using only a few ingredients (and only one mandatory one – the carrots!)

Carrots are an incredibly nutritious vegetable, offering a wide array of health benefits. They are rich in beta-carotene, which the body converts into vitamin A, essential for maintaining healthy vision, skin, and immune function. Additionally, carrots are an excellent source of dietary fiber, promoting digestive health and keeping you feeling full and satisfied between meals. Other notable nutrients found in carrots include vitamin K, vitamin C, potassium, and antioxidants, which help protect the body from harmful free radicals and oxidative stress.

When cutting your chips, consistency in thickness ensures even dehydration and a satisfying crunch in the final chip. Once fully dehydrated and cooled, these homemade carrot chips are not only a healthier alternative to traditional potato chips but also offer a delightful way to incorporate more vegetables into your diet.

Ingredients

  • Wide carrots (Red Giant varietals are great)

Instructions

  1. Wash & peel/scour carrots. (Alternatively, you can also blanch them for 2 minutes first)
  2. Use a mandolin to make thin, uniform slices (or the potato cutter above, but it’s harder to make uniform slices that way).  You can do them in rounds, or even slice them the long way for bigger chips.
  3. Spread carrots on your dehydrator trays and dry at 125°F for 6 to 10 hours or until dry and crispy.
  4. Once cool, store  in an air-tight bag or container.
