Apple Butter Peach Cobbler

Does any other fruit scream “summer” more than peach? This homemade Apple Butter Peach Cobbler recipe is especially enticing because it’s made in the slow cooker, which means you don’t have to worry about heating up the house in 90-degree heat. All you have to worry about is having snacks on hand to curb your hunger after smelling the delicious aroma of peaches and apple butter cooking all day!

To create the fruity filling, you’ll need about 3 pounds of fresh or frozen peaches, sliced and pitted. Combine them with apple butter, bourbon, sugar, and a pinch of kosher salt in your slow cooker. This mixture will simmer and meld into a delectable filling as it cooks.

For the cobbler topping, mix all-purpose flour, yellow cornmeal, sugar, baking powder, and kosher salt in a bowl. Blend in whole milk and melted butter to create a smooth batter. Pour this batter over the peach filling, ensuring it covers the entire surface.

To prevent condensation from dripping onto the cobbler, place a piece of paper towel over the slow cooker before covering it with the lid. Cook on Low for 7 to 9 hours or on High for 4 to 6 hours, until the cobbler is done. You’ll know it’s ready when the top is puffed up and golden brown around the edges, and a toothpick inserted into the center comes out clean.

If desired, serve the Apple Butter Peach Cobbler warm, garnished with extra peach slices. Each bite combines sweet, tender peaches, rich apple butter, and a subtly crunchy cobbler topping. Whether enjoyed as a dessert or a sweet treat, this slow cooker cobbler captures the essence of summer in every bite.

Ingredients

  • Peach Filling:
    • 3 pounds fresh or frozen peaches, pitted, if fresh, and sliced, plus additional for garnish
    • 3/4 cup apple butter
    • 1/4 cup bourbon
    • 1/4 cup sugar
    • 1/4 teaspoon kosher salt
  • Cobbler:
    • 1 1/2 cups all-purpose flour
    • 3/4 cup yellow cornmeal
    • 3/4 cup sugar
    • 1 tablespoon baking powder
    • 1 teaspoon kosher salt
    • 1 1/4 cups whole milk
    • 1/2 cup (1 stick) unsalted butter, melted

Instructions

  1. For the peach filling: Spray the insert of a 6-quart slow cooker with cooking spray.
  2. Place the peaches, apple butter, bourbon, sugar, and salt in the slow cooker. Stir to coat the peaches fully, then spread them out evenly.
  3. For the cobbler: In a large bowl, mix the flour, yellow cornmeal, sugar, baking powder, and salt. Whisk in the milk. Whisk in the melted butter until smooth. Pour the batter over the peaches, making sure it coats the entire surface.
  4. Place a long piece of paper towel over the slow cooker and cover with the lid. Pull the paper towel tight so it doesn’t sag. Cook on Low for 7 to 9 hours or on High for 4 to 6 hours, until a toothpick inserted into the center comes out clean. Once the middle of the top has puffed up and is golden around the edges, the peach cobbler is ready to serve.
  5. Serve warm, garnished with extra peach slices.
