The Dragon’s Tongue Romano bush bean is a striking addition to any garden. Delicate purple flowers give way to beans that turn yellow with purple streaks when ready to harvest. One of the few green bean cultivars that can be eaten raw, they are juicy and crunchy when freshly picked. When cooked, they lose their purple streaks, but you’ll forgive these beans when you taste their sweet, buttery flavor.

Characteristics:

  • Romano (Italian) style bush bean
  • Matures in 60 days
  • Harvest when beans are yellow with purple streaks, about 6 to 8 inches long
  • The more sun exposure, the more pronounced the purple streaks
  • Can be enjoyed raw or cooked, especially in Italian recipes
