This variety has lovely purple florets on white stems. It matures in 80 to 100 days, and reaches a height of about 20 inches. The dense heads contain the antioxidant anthocyanins, which give it its color.
Some purple types of cauliflower turn green during cooking, but try adding vinegar or lemon juice to aid in color retention.
