No Bake Almond Coconut Bites

Sometimes the best desserts are the ones that come together with a little stirring, a little scooping, and absolutely no oven required. These sweet little bites are inspired by a beloved almond-coconut candy bar, bringing together all those familiar flavors in a simple homemade treat that feels both nostalgic and indulgent.

Shredded coconut, sliced almonds, chocolate-hazelnut spread, and oats combine to create a rich, chewy base packed with texture and flavor. As the ingredients melt and blend together, they form a mixture that’s sweet, nutty, and just chocolatey enough to satisfy a serious dessert craving. A whole almond pressed into the top of each bite adds a satisfying crunch, while a drizzle of dark chocolate creates a glossy finishing touch that makes these treats look as irresistible as they taste.

After a few hours of resting, the bites firm up into perfectly snackable little mounds that are easy to share—or keep all to yourself. They’re wonderful for parties, afternoon treats, or tucking into lunchboxes for a sweet surprise. And because they’re completely no-bake, they’re a perfect dessert to whip up any time you want something chocolatey, coconutty, and delightfully simple.

Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons heavy cream
  • 1/2 cup chocolate-hazelnut spread
  • 1/4 teaspoon coconut extract
  • 1 tablespoon unsweetened cocoa powder
  • 1 cup sliced almonds
  • 1 1/2 cups sweetened shredded coconut
  • 3/4 cup quick-cooking oats
  • Pinch of sea salt
  • 16 whole almonds
  • 1/2 cup dark chocolate, chips or chopped, melted

Instructions

  1. In a large saucepan, combine the butter, cream, chocolate-hazelnut spread, and coconut extract. Heat over medium heat until the mixture is melted.
  2. Stir in the cocoa powder, sliced almonds, shredded coconut, oats, and salt.
  3. Using a cookie scoop, shape the dough into 2-inch mounds and place on parchment paper, pressing firmly to smooth. The mixture may be soft.
  4. Press a whole almond onto the top of each cookie.
  5. Drizzle the melted dark chocolate over the top of each cookie.
  6. Let the cookies sit for 2 to 3 hours at room temperature before serving.
