Lemon verbena, this underappreciated herb, is basically what would happen if a lemon and a flower had a baby – it’s citrusy but in this delicate, aromatic way that regular lemons can only dream about! When paired with the rich sweetness of honey, it creates this ethereal flavor profile that makes everything taste like it was made in a secret garden. That’s how this Lemon Verbena & Honey Sugar Mix came to be.

I discovered lemon verbena during a plant nursery expedition where I was supposed to be buying “practical” herbs but instead came home with what my husband now refers to as “the botanical equivalent of impulse-buying chocolate at the checkout.” But once I started experimenting with it, EVERYONE got on board! My daughter calls it “fairy lemonade herb” and insists on adding it to her water like she’s at some fancy spa. (And honestly? I’m here for anything that gets a 7-year-old excited about drinking more water!)

Ingredients

Scale
  • ¼ cup granulated sugar
  • 3 tablespoons dried honey granules
  • 3 tablespoons dried lemon verbena, finely crushed
  • 1 tablespoon dried lemon zest
  • 1 teaspoon vanilla powder (optional but wonderful)
  • ⅛ teaspoon salt (trust me on this one!)

Instructions

  1. Mix and add to a 4oz jar.

This aromatic Lemon Verbena & Honey Sugar Mix is dessert elevation in a jar! It’s absolutely enchanting sprinkled over fresh berries or stone fruits where the citrusy notes enhance the natural sweetness of the fruit. It’s also magical stirred into whipped cream or yogurt, where it adds dimension without overwhelming. For a simple yet impressive dessert, brush sliced pound cake with melted butter, sprinkle with this sugar, and broil briefly until caramelized. Serve with fresh berries for a dessert that tastes like it came from a patisserie!
