Herbes de Provence Grilling Blend

There’s something about saying “Herbes de Provence” that makes me feel instantly sophisticated, like I should be cooking in a rustic farmhouse kitchen in the South of France. This Herbes de Provence Grilling Blend has saved many a weeknight dinner. The original Herbes de Provence from Southern France traditionally didn’t include lavender – that was actually an American addition in the 1970s when Julia Child made French cooking fashionable. But honestly? The lavender is what makes this blend MAGICAL, adding that subtle floral note that makes everyone ask, “What’s in this?!” The herbs in this mix have been growing wild on the hillsides of Provence for centuries, perfuming the air and flavoring the local cuisine.

If you can’t find dried lavender, don’t panic – this Herbes de Provence Grilling Blend is still delicious without it, though slightly less “transport-you-to-a-French-countryside” powerful. Use this blend to turn even the most humble ingredients into something that tastes like you spent hours in the kitchen instead of five minutes frantically throwing dinner together!

Ingredients

Scale
  • 2 tablespoons dried thyme
  • 2 tablespoons dried savory (if unavailable, use thyme)
  • 2 tablespoons dried marjoram
  • 2 tablespoons dried rosemary (crushed)
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 teaspoon dried lavender flowers (culinary lavender only)
  • 1 teaspoon dried fennel seeds
  • ½ teaspoon dried sage

Instructions

  1. Mix together then store in a 4oz jar

Notes

  • Serving size: 1-2 teaspoons per pound of meat or vegetables

This Herbes de Provence Grilling Blend is basically French cooking in a jar! It’s particularly wonderful with chicken – either sprinkled under the skin of a whole bird before roasting or mixed with a little olive oil to coat chicken pieces before grilling. But where it really shines is with vegetables – toss summer squash, bell peppers, and eggplant with olive oil and this blend before roasting for instant ratatouille vibes. For the simplest yet most impressive appetizer, mix this blend with good olive oil and serve with crusty bread for dipping.

It also makes an incredible seasoning for homemade croutons – just saying! Herbes de Provence pairs beautifully with foods that have a little sweetness, like roasted root vegetables or a honey glaze on pork. For maximum flavor impact, crush a little extra between your palms right before sprinkling it on at the end of cooking to release those fragrant essential oils.
