Herb-Infused Hungarian Dumplings

Soft, flavorful dumplings infused with fresh herbs and paprika, boiled in a seasoned broth to complement hearty stews like Hungarian Goulash.

These delicate dumplings, infused with paprika and fresh herbs, were the perfect companion to the rich Hungarian goulash we enjoyed in Budapest. Their tender texture and subtle spice made every bite unforgettable. What struck me most was how these simple dumplings elevated the entire meal from good to extraordinary.

Hungarian dumplings are nothing like the heavy, dense versions you might expect. When made properly, they’re light and pillowy, with just enough structure to hold together in the broth. The secret is not overworking the dough – you want to mix it just until it comes together, then handle it gently from there.

Adding paprika directly to the dough gives these dumplings their characteristic Hungarian flavor and a beautiful golden color. The fresh herbs – parsley and chives work wonderfully – get kneaded right into the dough so every bite has that bright, fresh taste. I grow both herbs in my garden, and there’s nothing quite like using them straight from the soil.

The technique for shaping is forgiving. You can roll them into small balls, form them into little ovals, or even just pinch off pieces of dough – they’ll taste great regardless of their shape. What matters is getting them into simmering, not boiling, broth. Too vigorous a boil will break them apart.

I like to cook these dumplings directly in the goulash during the last 10 minutes of cooking, so they absorb all those rich flavors. But you can also cook them separately in seasoned broth if you prefer. Either way, they’re ready when they float to the surface and feel firm to the touch.

These dumplings transform any soup or stew into something special, but they’re particularly magical with Hungarian Goulash, where the paprika in both dishes creates this perfect harmony of flavors.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp Hungarian paprika
  • 2 eggs
  • 1/2 cup water
  • Fresh herbs (parsley, chives), chopped

Instructions

  1. In a mixing bowl, combine flour, salt, and paprika.
  2. Make a well in the center; add eggs and water. Mix until a dough forms.
  3. Knead the dough on a floured surface, incorporating fresh herbs.
  4. Shape into small dumplings and boil in a paprika-infused broth until cooked through.
