Creamy Mashed Cauliflower with Melted Butter

Mashed potatoes are the best. There’s just something about them that makes them so darn good. Some people say it’s the butter, others say it’s the salt. But I think we all know the real reason why mashed potatoes are so great: because they’re versatile!

Mashed potatoes go with so much, too. Need a side dish for your roast chicken, steak, fish, or turkey? Mashed potatoes to the rescue! And don’t even get me started on how amazing they are next to Thanksgiving stuffing.

Seriously, if there was ever a food that could do no wrong, it’s mashed potatoes. So go ahead and make some tonight—you won’t regret it!

To make your mashed potato endeavors even better, this recipe uses an electric pressure cooker like an Instant Pot. If there was any good reason to get an electric pressure cooker, it’s these Awesome Instant Mashed Potatoes. Yes, you can boil your potatoes and make this same recipe, but with an electric pressure cooker you can make epic mashed potatoes in less than five minutes worth of work. Let’s do it.

In your electric pressure cooker, add five pounds of Yukon Gold potatoes, sliced into rounds or quartered with the skins on, and enough water to totally cover them, along with 2 teaspoons of salt. Cook on manual high setting for 13 minutes, then use the manual release to let the steam out. When they’re done, drain the potatoes, then add them back to the Instant Pot. Add 1 cup of butter, 1/2 cup sour cream, 1/2 cup freshly-grated Parmesan cheese, and a half cup of heavy cream. You can also add some fresh chives or parsley. Mash it or mix it up, then add salt and pepper to your liking and enjoy!

If you have some garlic confit lying around, you can also add a couple of teaspoons of that too. Rawr!

Ingredients

  • 5 pounds Yukon Gold potatoes, sliced into rounds or quartered with the skins on (or peel if you must)
  • 2 teaspoons salt
  • 1 cup butter
  • 1/2 cup sour cream
  • 1/2 cup fresh-grated Parmesan cheese
  • 1/2 cup heavy cream
  • More salt and pepper to taste
  • Optional: fresh chives and parsley

Instructions

  1. In your electric pressure cooker, add sliced potatoes with enough water to totally cover them, along with 2 teaspoons of salt.
  2. Cook on manual high setting for 13 minutes, then use the manual release to let the steam out. When they’re done, drain the potatoes, then add them back to the electric pressure cooker.
  3. Add butter, sour cream, freshly grated Parmesan cheese, and heavy cream. You can also add some fresh chives or parsley.
  4. Mash it or mix it up, then add salt and pepper to your liking and enjoy! If you have some time before eating, just set it to the slow cook, or warming mode.

    Easiest, tastiest mashed taters; we do not include the Parmesan cheese. Remember to use the 2 tsp salt in water. White pepper is best.
