Herb and Pecan Encrusted Salmon

A Symphony of Flavor with Pecans, Salmon, and a Zesty Cucumber Sauce

Salmon enthusiasts and picky palates alike, prepare to embark on a culinary journey that will tantalize your taste buds and leave you craving for more. This delightful recipe for Pecan Encrusted Salmon paired with a refreshing Cucumber Sauce is not only a feast for the senses but also a celebration of health and flavor. Let’s dive into the world of wholesome ingredients and mouthwatering combinations that will elevate your salmon experience.

 

Pecan Encrusted Salmon

Ingredients:

  • 4 salmon fillets (approximately 6 ounces each)
  • 1 cup pecans, finely chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried Italian herbs (a mix of basil, oregano, and thyme works wonders)

Instructions:

  • Preheat your oven to 375°F (190°C).
  • Pat the salmon fillets dry with a paper towel and season both sides with salt, pepper, and the dried Italian herbs.
  • In a shallow bowl, spread the finely chopped pecans.
  • Brush each salmon fillet with olive oil, ensuring an even coat.
  • Press each fillet into the pecans, coating both sides generously for that irresistible crunch.
  • Place the pecan-crusted salmon fillets on a baking sheet lined with parchment paper.
  • Bake for 15-20 minutes or until the salmon flakes easily with a fork and the pecans are golden brown.

 

Zesty Cucumber Sauce

Ingredients:

  • 1 large cucumber, peeled, seeded, and finely diced
  • 1 cup Greek yogurt (low-fat or non-fat)
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Instructions:

  • In a bowl, combine the diced cucumber, Greek yogurt, chopped dill, and fresh lemon juice.
  • Mix thoroughly and season with salt and pepper to taste.
  • Refrigerate the sauce for at least 30 minutes to allow the flavors to meld.

 

Serving Suggestions:

Plate each pecan encrusted salmon fillet on a bed of mixed greens or quinoa for a wholesome meal. Drizzle the zesty cucumber sauce over the salmon or serve it on the side, allowing your guests to customize their experience. Garnish with additional fresh dill for a burst of color and aroma.
