Easy Maple Roasted Potatoes and Squash with Bacon

Your whole family will love these maple-roasted potatoes and squash with crispy bacon, and you’ll love it because it’s so easy!

Do you want a beautifully simple recipe that allows you to gather your white potatoes, sweet potatoes and squashes, and transform them into a side dish you can eat all week long? Trust me, even the pickiest eaters will scoff these Maple Roasted Potatoes and Squash with Bacon.

Why? Because just when you think roasting these root veggies and squashes in bacon couldn’t make the dish any better, you toss it in maple syrup at the last moment to quickly caramelize and transform it into a sticky-sweet but still savory dish that’s only made better by how easy it is to throw together!

I like to use walnut oil when cooking different sweet potatoes and squashes because it gives it a light nutty taste as it cooks, but if you don’t have walnut oil, extra virgin olive oil or ghee will do. You’ll be going light on it, because the bacon will cover the rest.

Ingredients

Scale
  • 1 large white potato
  • 1 sweet potato
  • 1 delicata squash
  • 1 honeynut squash (a small butternut works too)
  • 1/2 cup onions, sliced into rounds
  • 1 to 2 tablespoons walnut oil
  • 2 heaping tablespoons mixed fresh herbs (thyme, rosemary, and sage are all lovely)
  • 8 ounces bacon
  • Salt and pepper

Instructions

  1. Preheat oven to 400 degrees F and prepare a baking sheet.
  2. Peel your potatoes and honeynut (or butternut) squash, de-seed, and cut into 1/2-inch cubes. For your delicata squash, simply discard the ends, and cut into 1/4-inch rounds, discarding seeds as they come up.
  3. Toss your potatoes and squash on to the baking sheet with sliced onions, walnut oil, and fresh herbs. 
  4. Lay bacon out across your potatoes and squash to create an even layer.
  5. Bake for 30 minutes or until tender and bacon is crispy. Then remove, drizzle with maple syrup and toss. Put back in the oven for another 5 minutes. 
  6. Let cool and break up the bacon, drizzle with any remaining maple syrup, toss again, and enjoy!
