Fancy Honey-Glazed Roasted Carrots Recipe

Fancy Honey-Glazed Roasted Carrots are the sort of dish that might sound like they belong on a five-star restaurant menu—and they are—but they’re also right at home on a casual family dinner table. I first experimented with this recipe on a whim after realizing my pantry was well-stocked with herbs and honey but embarrassingly low on main courses. With just a bag of carrots, a splash of walnut oil, and a bit of rosemary and thyme, these carrots quickly turned into a little love affair.

I love versatile recipes that make use of staple ingredients but don’t require a whole day of prep, and Fancy Honey-Glazed Roasted Carrots check all those boxes.

Trader Joe’s sells bags of these adorable pre-shaved multi-color carrots that are the perfect size, and I use them almost exclusively in the off-season, which makes this dish that makes it as easy as can be.  Whether you’re throwing them on a holiday table, pairing them with roasted chicken, or even adding them to a salad, they have a way of stealing the show. It’s also a great recipe for anyone looking to up their vegetable game. Carrots are humble, sure, but they get to be the star here—no one can argue that they don’t deserve a moment in the spotlight!

What’s even better? This is one of those magical dishes that doesn’t leave you with a mess. Just one pan, a handful of ingredients, and about an hour of hands-off roasting time, and you’re left with carrots that look like they could be in a food magazine but taste homey and comforting. Just writing about them makes me want to put them on the dinner menu again tonight!

You can make simple honey-glazed carrots with a few easy ingredients, that will be a crowd pleasing side at the dinner table. Kid-friendly and approved!

Scale
  • 10–15 carrots, about 6“, peeled
  • 2 tbsp walnut oil or melted butter
  • 1/2 cup freshly chopped herbs like rosemary and thyme
  • 3 tbsp honey
  • cinnamon to taste
  • salt and pepper to taste

 

Instructions

  1. Preheat oven to 400F
  2. On a large baking sheet, add carrots, and drizzle with olive oil, toss with freshly chopped herbs, salt and pepper.
  3. Roast for about 20 minutes, and check tenderness. Drizzle with honey and turn carrots, then bake another 20-40 minutes depending on your desired tenderness.
  4. Remove from oven and toss again. Sprinkle with a pinch or two of cinnamon, and enjoy.

First, they start with a base of simple but flavorful ingredients: carrots, honey, and a handful of fresh herbs.   • Carrots: Choose fresh, medium-sized carrots—about 10 to 15, depending on how many you’re serving. Peel them, but don’t worry if they aren’t all exactly the same size; the variation in size adds a bit of rustic charm.
  • Walnut Oil or Butter: This oil gives the carrots a mild, nutty flavor that complements the honey without overwhelming it. Butter can work too, especially if you want a richer flavor, though it may not crisp as well as the walnut oil.
  • Fresh Herbs (Rosemary and Thyme): I think the fresh herbs really make these carrots feel “fancy.” Rosemary and thyme add aromatic depth, and while dried herbs will work in a pinch, the fresh ones bring a fuller flavor.
  • Honey: The honey in this recipe caramelizes as the carrots roast, adding a sweetness that highlights the natural sugars in the vegetables. Feel free to adjust the amount depending on your taste preference.
  • Cinnamon: The cinnamon at the end is a small but impactful touch. It adds a hint of warmth and just the right amount of spice.
  • Salt and Pepper: These are essential, as they bring out the carrots’ natural sweetness and balance out the honey.

The first time I made these Fancy Honey-Glazed Roasted Carrots, I was surprised at how quickly they went from bright orange to perfectly roasted. I started by tossing the carrots in the walnut oil, fresh herbs, salt, and pepper. Into the oven they went at 400°F, and within 20 minutes, I could already see the edges beginning to caramelize.

  • Citrus Twist: Add a small splash of orange juice along with the honey. I love, love, LOVE adding orange to a carrot dish, even if it’s just some fresh zest!
  • Nutty Crunch: Toss in a handful of chopped pecans or walnuts during the last 10 minutes of roasting for added texture.

  • Use similar-sized carrots so they cook evenly.
  • Don’t skimp on the herbs—fresh rosemary and thyme bring a lot of flavor.
  • Toss halfway through roasting to ensure even caramelization.
  • If using butter instead of walnut oil, keep an eye out for browning.
  • Taste the carrots at the 40-minute mark; you can adjust the honey or cinnamon if needed.
  • Sprinkle a bit of salt at the end if you want to balance out the sweetness.
  • Serve immediately or keep warm in the oven at a low temperature.

Allergy-Friendly Substitutions

  • Nut Allergy: Use olive oil or melted butter instead of walnut oil.
  • Vegan Option: Substitute honey with maple syrup for a plant-based version.
