Nick’s Southern Herb and Spice Mix: A Family Legacy

Every chicken should be so lucky!

Growing up, I was fortunate enough to inherit not just a love for food from my father, but also a family recipe that has been a cornerstone of our meals for generations. Today, I’m excited to share with you the magic behind Nick’s Southern Herb and Spice Mix – a concoction born out of my dad’s pursuit of the perfect Southern fried chicken, but one that found its way into various culinary adventures, especially the beloved roast chicken dinners at our family restaurant.

Ingredients:

1 whole chicken (about 4-5 pounds)
Nick’s Southern Herb and Spice Mix (see below)
1/2 cup unsalted butter, softened

Nick’s Southern Herb and Spice Mix:

2 tablespoons dried thyme
2 tablespoons dried basil
1 tablespoon dried rosemary
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne pepper

Instructions:

1. Preparing the Chicken:

If using a whole chicken, make sure it’s clean and pat it dry with paper towels.
Preheat your rotisserie or oven to 375°F (190°C).

2. Applying the Herb and Spice Mix:

Rub the chicken inside and out with the softened butter.

Generously sprinkle Nick’s Southern Herb and Spice Mix over the entire surface of the chicken, making sure to coat it evenly.

3. Rotisserie Roasting:

If you’re lucky enough to have a rotisserie, secure the chicken on the spit and let it rotate over medium-high heat for about 1.5 to 2 hours or until the internal temperature reaches 165°F (74°C). This slow rotation ensures a juicy and evenly cooked chicken.

4. Oven Roasting (Alternative):

For those without a rotisserie, place the seasoned chicken on a roasting pan with a rack.

Roast in the preheated oven for approximately 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C). Baste the chicken with pan juices every 30 minutes for added flavor.

5. Let it Rest:

Allow the chicken to rest for at least 15 minutes before carving. This ensures that the juices redistribute, keeping the meat succulent.

6. Serving Suggestions:

Serve with your favorite sides, whether it’s mashed potatoes, roasted vegetables, or a simple salad.
The result is a roast chicken that captures the essence of Southern comfort, thanks to the aromatic blend of herbs and spices. The thyme and basil provide a fragrant backdrop, while the rosemary, paprika, garlic, onion, and cayenne pepper add layers of flavor that will leave your taste buds singing.
