Gooseberry Mixer

Instructions

  1. Wash gooseberries thoroughly.
  2. Put water into a large saucepan and set the stove on medium-high heat.
  3. Add the sugar; stir until the sugar is completely dissolved.
  4. Turn heat down to medium.
  5. Add lemon juice and lemon zest.
  6. Add the gooseberries and bring the mixture to a simmer.
  7. Cook for 10 minutes, until the gooseberries are soft.
  8. Use a potato masher or immersion blender to create a uniform mixture.
  9. Allow the mixture to cool, then strain it through a sieve.
  10. Store mixer in an airtight container in the fridge for up to a week.
  11. Use as you would a simple syrup.
