Rhubarb Comfort Crumble

There’s something so satisfying about rich, warm fruit with crispy, crumbly bits mixed in. With ice cream or on its own, this crumble is bound to become a comfort food favorite on your family menu.

Ingredients

  • 4 cups rhubarb, diced
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1/4 cup all-purpose flour
  • 2 cups all-purpose flour
  • 1/2 cup (1 stick) of butter, cold

Instructions

  1. Preheat oven to 375 degrees F.
  2. Combine rhubarb, white sugar, and the 1/4 cup of flour in a large bowl. Mix thoroughly.
  3. Put rhubarb mixture into a greased 7-inch x 11-inch baking dish.
  4. Combine the brown sugar, oats, and the 1 1/2 cups of flour in a large mixing bowl.
  5. Use a fork or a pastry knife to cut the butter into the sugar/flour mixture until it reaches a crumbly consistency.
  6. Sprinkle mixture over the rhubarb.
  7. Bake for 35 to 40 minutes.
  8. Serve warm, chilled, or at room temperature. Ice cream optional.
