In this recipe, Greek yogurt replaces some of the high-fat ingredients like sour cream or butter that usually dominate a corn casserole. That way you get all of the tastiness of a creamy favorite without all the unhealthy drawbacks.

Instructions

  1. Preheat the oven to 350 degrees F. Lightly coat an 8 × 8-inch baking dish with cooking spray.
  2. In large mixing bowl, whisk together the egg and egg white. Stir in the Greek yogurt and melted butter.
  3. Stir in the whole kernel corn, golden sweet corn, and corn muffin mix.
  4. Pour into the baking dish and bake for 35 to 40 minutes or until the center is set and the top is lightly golden brown. Slice and serve.
