Jambalaya with Okra

Instructions

  1. Season the sausage and chicken with half of the Cajun seasoning.
  2. Heat 1 tablespoon of oil in a Dutch oven or large pot.
  3. Brown the sausage first, then remove it from the heat and set it aside.
  4. Brown the chicken next, adding more oil as needed. When the chicken is browned, remove it from the pot and set it aside with the sausage.
  5. Sauté the onion, peppers, and celery until the onion begins to turn translucent. Add the garlic and cook for another minute.
  6. Add the tomatoes.
  7. Season the pot with salt, pepper, red pepper flakes, hot pepper sauce, Worcestershire sauce, and the remaining Cajun seasoning.
  8. Stir in the okra, chicken, and sausage.
  9. Cook for five minutes, stirring occasionally.
  10. Add the rice and chicken broth, and bring the liquid to a boil.
  11. Turn the heat down to medium-low.
  12. Cover and let the pot simmer for 20 to 25 minutes, until most of the liquid is absorbed and the rice is cooked. Stir every 5 minutes or so.
  13. Add the shrimp to the mixture and stir it in.
  14. Cover the pot with a lid and simmer for about 5 minutes, until the shrimp is cooked through.
  15. Check shrimp for doneness.
  16. Adjust seasoning as needed.
  17. Garnish with scallions and parsley and serve immediately.
