Greek Yogurt Cake

The Greek yogurt in this recipe makes the cake extra moist, so your fork gracefully slides through as you take each bite. I topped it with confectioners’ sugar and slices of strawberry, but it’s easy to customize it how you like, whether you add cinnamon sugar, mixed berries, or even a chocolate drizzle.

  1. Preheat the oven to 350 degrees F. Lightly coat a 9-inch springform pan with cooking spray.
  2. In a medium bowl, beat the eggs with a hand mixer on medium speed for 1 minute.
  3. Add the granulated sugar, yogurt, and oil and mix for 1 minute. Add the orange zest and almond extract.
  4. Next add the flour, baking powder, and salt and beat until incorporated.
  5. Pour the batter into the pan and bake for 35 to 40 minutes until a toothpick inserted into the middle of the cake comes out clean.
  6. Remove the cake and place on a wire rack for 5 minutes.
  7. When the cake is cool, sprinkle with confectioners’ sugar and top with sliced strawberries. Cut into slices and serve.
