Classic Rhubarb Pie

Skip the commonly-included strawberries and stick to the classic all-rhubarb rhubarb pie. Simple ingredients make for a stunning dessert. From counter to oven to table in just over an hour.

Instructions

  1. Preheat oven to 450 degrees F.
  2. Put one pie crust in the bottom of the pie pan.
  3. Combine the sugar and flour.
  4. Sprinkle 1/4 of the sugar/flour mixture over the bottom of the pie crust.
  5. Pile rhubarb into the pie plate.
  6. Cover rhubarb with the remaining sugar/flour mixture.
  7. Dot the top with small pieces of butter.
  8. Add top crust; seal and crimp.
  9. Cut small vent slits in top crust
  10. Put the pie on the lowest rack in the oven and bake for 15 minutes.
  11. Reduce oven temperature to 350 degrees F and bake for another 40 to 45 minutes.
  12. Serve warm or cold; with ice cream or without.
