Chicken & Rice Soup

It might sound like a simple recipe, but the flavor of this chicken and rice soup is anything but that. It’s got all the trappings of a subtly sweet, creamy, and mildly spicy soup that you can enjoy regardless of the season!




  1. Pour olive oil in large pot. Add carrots, celery, and onion.
  2. Simmer over medium heat until onions are translucent, approximately 10 minutes.
  3. Add the garlic cloves, chicken stock, water, and 1 cup of milk to the mixture and stir until combined.
  4. Add the pepper, dried oregano, and shredded chicken. Mix until combined.
  5. Simmer over medium heat for 15 minutes.
  6. Whisk together the remaining 1 cup of milk with the 1/2 cup flour until no lumps remain.
  7. Pour this into the soup mixture and whisk.
  8. Place the long grain and wild rice and the seasoning packet into the soup and mix until combined.
  9. Simmer for 20 more minutes, then enjoy!
