This candied ginger recipe is a great way to show off your harvest and serve a fabulous snack when entertaining for dinner.

Instructions

  1. Spray a cooling rack with nonstick spray and put it in a cookie pan lined with waxed paper.
  2. Peel and thinly slice the ginger root.
  3. Bring the sugar and water to boil in a medium-size saucepan. When the sugar is dissolved, add the ginger.
  4. Simmer for 30 to 45 minutes, until the ginger is tender.
  5. Drain the ginger over a bowl and reserve the liquid for another use.
  6. Spread the ginger on the cooling rack and let it dry for at least 30 minutes.
  7. Once the ginger is dry, toss it lightly with additional sugar to coat.
  8. Store in an airtight container in a cool place.
