Ingredients

Oil, cooking spray, or butter for greasing
2 tablespoons blueberries—fresh or frozen
1/4 cup plus 1 tablespoon flour, almond meal, or ground flax (or a combination of them)
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1 egg
1 tablespoon honey, maple syrup, or sugar
Optional: 1 tablespoon yogurt or whipped cream
Instructions
Grease a microwave-safe mug or bowl with butter or oil.
Mix your dry ingredients together thoroughly—in a mixing bowl or right in your greased bowl or mug.
Add the egg and honey and mix it all together.
Stir in the blueberries.
Microwave at 30-second intervals, checking each time for doneness.
Do not over-microwave or the muffin will be tough.
Garnish with a dollop of yogurt or whipped cream, if desired.
