A classic in Waldorf kindergarten classrooms, this Veggie Lentil Soup is incredibly easy to make and is packed with flavor. It’s always a hit at our soup swap parties!

Instructions

  1. Add 8 cups of water to a slow cooker and set to high.
  2. In a skillet, add a drizzle of olive oil, and when it gets hot, add onions and garlic. Let them cook for a few minutes to release the gasses in the onions, then pour them into the slow cooker along with the potatoes and carrots, soy sauce, and dried marjoram, thyme, and sweet basil.
  3. Cook on high for four hours, or low for up to eight hours.
  4. About an hour before you want to serve, add the kale and lentils.
  5. Before serving, add salt and pepper to taste.
