  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, chopped dates, and mixed nuts.
  3. In a small saucepan, gently heat the honey, coconut oil, vanilla extract, and salt until melted and well combined.
  4. Pour the honey mixture over the oat mixture and stir until everything is evenly coated.
  5. Spread the granola mixture in an even layer on the prepared baking sheet.
