1 can (13.5 oz) coconut milk (full-fat works best)
2 tablespoons fish sauce
2 tablespoons brown sugar or palm sugar
3 tablespoons fresh lime juice
2 tablespoons vegetable oil
3 garlic cloves, minced
2 stalks lemongrass, outer layers removed, tender inner part minced
1 tablespoon fresh ginger, grated
1 tablespoon green curry paste (adjust to taste)
¼ cup fresh cilantro, chopped
2 green onions, thinly sliced
1 Thai chili, minced (optional)
Instructions
Whisk all ingredients together in a bowl until well combined
For best results, place your protein in a zip-top bag, pour in marinade, and refrigerate for at least 2 hours (or overnight).
