Soda Pop Cookies

Soda pop not only adds moisture to a cookie but also helps the cookie achieve the perfect balance of fluffiness and flavor. I used root beer with these particular cookies, but feel free to substitute with your favorite type.

  1. For the cookies: Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper. Set aside.
  2. In a large bowl, combine the flour, salt, baking soda, and baking powder.
  3. In another bowl, cream together the butter, granulated sugar, brown sugar, and vanilla until light and fluffy. Add in the egg, then the soda pop, and mix until just combined.
  4. Slowly add the flour mixture, about one cup at a time, until just combined.
  5. Scoop in 1 1/2 tablespoon portions onto prepared baking sheets and space the cookies about 2 inches apart.
  6. Bake for 10 to 13 minutes. Remove from the oven and allow the cookies to cool for about 3 minutes. Then transfer to a cooling rack to cool completely.
  7. For the frosting: Beat the butter with 1 cup of the confectioners’ sugar until it begins to turn creamy. Once it’s smooth and light in color, add the soda pop. Then add in the remaining 3 cups of confectioners’ sugar, one cup at a time. Frost the cooled cookies and serve.
