Skillet Scallions

Let’s start out with something simple and delicious. All you need are scallions and butter. Make sure you have a skillet that’s big enough to accommodate the size of the scallions (or trim your scallions to fit your pan) and a lid to cover the pan. The rich flavor comes from letting the scallions steam with the butter.

  1. Pick off any yellow leaves from the base of the scallions.
  2. Cut away the roots (cut away a slightly longer section if you plan to regrow your scallions on the windowsill).
  3. Wash the scallions in cold water; do not pat dry (this bit of water will help with the steaming).
  4. Trim the tops of the scallions so they fit your skillet.
  5. Heat the skillet and add the butter.
  6. When the butter starts to foam, add the scallions and cover with a lid.
  7. With the heat on medium cook the scallions for about 3 minutes.
  8. Turn the scallions over and cook for another minute or two.
  9. Be careful not to overcook; the white part of the scallions should be slightly crisp, and the green leaves should be tender and shiny.
  10. Serve as a side dish, or as a bed for grilled fish or roasted meat.
